This is the “Chicken In A Nest” recipe out of my 1940s Culinary Arts Institute Cookbook.
If you watched my video, you’ll see I mentioned the fact that this cook book gave me barely any instructions.
Recipe copied directly from the book, let me know if you interpret it in any other way then I did!

Page 17, from the Poultry Section
3 tablespoons butter
1 tablespoon flour
3 ounces cream cheese
1 small pimiento, chopped
1 teaspoon salt
1 cup milk
1 cup chicken broth
2 cups diced cook chicken
1 1/2 cups cooked macaroni
“Melt butter, add flour, cream cheese, pimiento and seasonings. Blend. Combine milk and chicken broth and add gradually to first mixture, stirring constantly. Heat to boiling and cook for 3 minutes. Add chicken and macaroni pile into greased baking dish and bake in moderate oven (350*F.) 25 to 30 minutes. Serves 8.”
Oh goodness, when it comes to me & molds or me & baking dishes I’m terrible at removing things without breaking them, or having them crumble.
My impatient qualities & why I ventured into culinary instead of baking at Le Cordon Bleu really shine through on those two things!
I’ll get the hang of it. I have too, especially with jello mold recipes coming up soon! Yikes!
Oh! Oh! I forgot to mention this recipe wasn’t half bad. Like I said the consistency was strange, but flavor wise it tasted almost like chicken & gravy with sprinkles of salty olive mixed in. It is kind of nice how when you cut into it & you get the chicken concoction mixed with the pasta.
