Hey there sweet cakes!
What’s on today’s menu?! Clam Balls from my Good Housekeeping Cook Book (1955).
Recipe is simple enough…
6 chopped, hard-cooked eggs
1 tablep. minced chives or onion
1/2 cup drained canned minced clams
1/2 teasp. salt
1/4 cup mayonnaise
2/3 cup chopped walnuts
Combine all ingredients except nuts. Shape into small balls. Roll balls in nuts. Refrigerate. Makes about 40.
Ham Balls: Substitute 1/2 cup ground, cooked ham for clams. Roll balls in crushed corn flakes instead of nuts.

So a few things to note. Mince everything, finely. Use a food processor! I found this out, of course, after the fact, but these little balls of the sea & sky still held together pretty well.
Also, note, that it says 6 cups of eggs….not 6 eggs. It’s a simple mistake! I wouldn’t judge you had you done that!
So let’s talk about the flavor profile. I honestly couldn’t get past the walnuts! O_O
If you’ve been with me this far I’m not much of a texture person, for example I don’t like crunchy with soft. Going past that, it didn’t taste horrendous! If I can get past the mayo, you can too! Unite #MayoHaters! (Buzzfeed taught me that hashtag).
Other than that it taste like a salty sea egg salad of sorts. Not bad. Just interesting. As are all these recipes (in my opinion!)
