| Irish Potato Puff Recipe |
2 eggs, well beaten
2 cups left-over mashed potatoes
4 strips bacon, fried crisp
Deep hot Planters Peanut Oil
Beat eggs and potatoes together thoroughly. Add crumbled bacon. Add salt and pepper, if needed. Drop mixtures by spoonfuls (or spoon on to waxed paper and put in freezer for a few hours) into deep Planters Peanut Oil. (370* F) and fry until golden brown. Drain on absobent paper.
