1 1/2 cups peanut butter
1 – 7 1/4 oz pkg. snipped pitted dates
1/2 cup snipped shredded coconut
1/2 teaspoon grated lemon rind
1 teaspoon lemon juice
3/4 cup confectioners’ sugar
3/4 cup finely crushed potato chips
Night before if desired:
Combine peanut butter, dates, coconut, lemon rind and juice. Sift sugar over mixture; blend well. Shape between palms of hands into large marble-size balls.
Just before serving: With rolling pin, crush potato chips between 2 sheets of waxed paper. Roll balls in crushed chips. Make 3 doz.
