Peanut-Butter Ham Rounds
Preheat broiler 10 min., or as manufacture directs. Cut 2- to 2 1/2 lb smoked boneless shoulder butt into crosswise slices, 1/2″ to 3/4″ thick. Broil till golden on both sides.
Start heating oven to 375*F. Spread each meat slice with 1 tbsp peanut butter. Arrange in shallow baking pan, side by side, with peanut-slices. Bake about 2 hr., or until fork-tender. As milk evaporates, add more milk- enough to keep tops of slices barely covered.
When meat is fork-tender, cut around slices, being careful not to disturb browned surface; lift out onto heated platter. Makes 4 to 6 servings.
